  1. Cut away and discard the core of the cabbage. Cut the cabbage lengthwise into eighths, then cut each piece crosswise into 1/2-inch strips. You should have about 12 cups loosely packed. Set aside.
  2. Heat the butter in a heavy, flameproof casserole or Dutch oven with a tight-fitting lid over moderately high heat.
  3. Add the pork chops to the casserole. Cook for about 2 minutes on each side, or until lightly browned.
