Ingredients

Directions

  1. Trim excess fat from pork chops and season both sides with salt and pepper.
  2. Heat a large skillet over medium heat and brown the pork chops on one side until golden.
  3. Flip the pork chops, season with remaining salt and pepper, and brown the other side.
  4. Drain excess fat from the skillet, leaving about a tablespoon for flavor.
  5. Top each pork chop with a slice of onion.
  6. In a small bowl, mix 1/2 cup water, orange juice, lemon juice, grated orange peel, brown sugar, and 1/2 teaspoon salt.
  7. Pour the orange mixture evenly over the pork chops in the skillet.
  8. Cover the skillet and simmer on low heat for 20 minutes.
  9. While the pork simmers, peel and slice sweet potatoes into thin rounds.
  10. After 20 minutes, lift pork chops out of the skillet and set aside on a plate.
  11. Add the sliced sweet potatoes to the sauce in the skillet.
  12. Return the pork chops to the skillet, placing them on top of the potatoes.
  13. Top each pork chop with a thin slice of orange.
  14. Cover the skillet and continue simmering for another 15-20 minutes, or until sweet potatoes are tender and pork is cooked through.
  15. Remove pork chops and sweet potatoes from the skillet and keep warm.
  16. In a small bowl, whisk together cornstarch and 1/4 cup cold water until smooth.
  17. Stir the cornstarch mixture into the sauce in the skillet.
  18. Cook the sauce over medium heat, stirring constantly, until it thickens and comes to a boil.
  19. Boil and stir for one additional minute to ensure the sauce is fully thickened.
  20. Pour the thickened orange sauce over the pork chops and sweet potatoes before serving.
