Description

This classic Pork Savory is a comforting, one-pot meal that combines tender lean pork with hearty root vegetables in a rich, tangy sour cream sauce. The dish features potatoes, carrots, and lima beans simmered together until soft, creating a wholesome side or main course. It's incredibly versatile: serve it immediately for a cozy dinner, or freeze portions for convenient future meals. The savory depth comes from slow-simmered pork and onions, balanced by the creaminess of the sauce.

Directions

  1. Brown the pork cubes in a large pot or Dutch oven over medium-high heat.
  2. Add hot water, salt, pepper, and instant minced onion to the pot.
  3. Cover and simmer the meat until it is almost tender, about 30 minutes.
  4. Add the diced potatoes and sliced carrots to the meat mixture.
  5. Simmer for 20 minutes longer, or until vegetables are tender.
  6. Drain the meat and vegetables, reserving the cooking liquid.
  7. Heat 1 1/2 cups of the reserved cooking liquid to a boil in a saucepan.
  8. Mix flour and cold water thoroughly in a small bowl to form a slurry.
  9. Slowly stir the flour mixture into the boiling liquid.
  10. Cook, stirring constantly, until the sauce thickens.
  11. Remove from heat and stir in the sour cream.
  12. Pour the sauce over the meat and vegetables and mix lightly to combine.
  13. To serve immediately, heat the mixture to serving temperature.
  14. To freeze, divide the mixture into four baking pans (for 6 servings each).
  15. Spread mixture evenly, cool for 30 minutes, wrap tightly, and freeze for 10-12 hours before removing from pans.
  16. To heat frozen food, preheat oven to 350°F (177°C), remove wrap, and bake for 1 hour until bubbly.
