Pork Vindaloo
Description
This authentic Pork Vindaloo delivers a bold, fiery punch with its signature blend of red chilies, ginger, and tangy vinegar. The lean pork becomes incredibly tender as it simmers slowly in the rich, aromatic spice paste, absorbing every bit of flavor. Unlike many modern interpretations that add tomatoes or cream, this traditional version relies on the deep complexity of ground spices and the sharp acidity of vinegar to cut through the richness. It is a hearty, satisfying dish perfect for serving with steamed rice or warm naan bread. Ideal for spice lovers and those seeking a robust, home-style Indian meal that packs a serious flavor profile without unnecessary fillers.Ingredients

Cut the lean pork into 1-inch cubes.

Add the mustard seeds to the hot oil and let them splutter.

Add the sliced green chillies and ginger, frying until they are dry and fragrant.
-
Stir in the ground spice paste and turmeric powder.
-
Fry the spice mixture, stirring frequently, until the oil begins to separate from the paste.
-
Add the cubed pork and curry leaves, mixing well to coat the meat in the spice paste.

-
Pour in the vinegar and add the salt, stirring to combine.
-
Cover the pot and reduce heat to low.
-

Note
Do NOT add water! The moisture from the onions, meat, and vinegar is sufficient to cook the pork tenderly. Adding water will dilute the intense flavors.
For a milder version, remove the seeds from the red chillies before grinding. For extra heat, leave them in.
This dish tastes even better the next day as the flavors meld further. Store leftovers in an airtight container in the refrigerator for up to 3 days.
If you cannot find white cumin, regular cumin seeds can be used as a substitute.
