Directions

  1. Preheat oven to 325ðF (165ðC).
  2. Pat the beef roast dry and season with salt and pepper.
  3. Heat an 8-quart Dutch oven over medium-high heat on the stovetop.
  4. Sear the beef roast on all sides until browned, about 8-10 minutes total.
  5. Add the beef barley soup mix and 5 1/2 cups of water to the pot.
  6. Bring the liquid to a boil, then cover the Dutch oven.
  7. Transfer to the oven and bake for 1 1/2 hours.
  8. While the meat cooks, peel and cut the rutabaga into 1 1/2-inch chunks.
  9. Peel carrots and cut lengthwise into quarters.
  10. Trim the ends off the green beans.
  11. Remove the Dutch oven from the oven and carefully take out 2 cups of the cooked barley and vegetables.
  12. Place the removed barley and vegetables into a blender and blend until smooth.
  13. Stir the blended mixture back into the liquid in the Dutch oven to thicken the gravy.
  14. Add the rutabaga chunks and carrot quarters to the pot.
  15. Cover and return to the oven to bake for 1 hour.
  16. Add the green beans, cover, and bake for an additional 30 minutes, until all vegetables and meat are tender.

Freezing: This casserole freezes well. Cool completely and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

Ingredient Substitutions: If you cannot find rutabaga, turnips or parsnips are excellent substitutes. You can also swap green beans for broccoli florets or red potatoes.
