Description

This potato bread is a comforting classic that stays fresh longer than standard white loaves thanks to the addition of instant potato flakes. The potato adds a subtle earthy sweetness and creates an exceptionally soft, tender crumb that pairs perfectly with butter or as a base for sandwiches. It&# 226;ÂÂs an ideal weekend baking project that fills your kitchen with a warm, yeasty aroma. While the dough requires some rising time, the process is straightforward and forgiving. Serve it warm from the oven for the best texture, or slice and toast for a hearty breakfast treat. ItâÂÂs a versatile staple that brings a rustic, homemade quality to any meal.

Ingredients

Directions

  1. Dissolve the yeast and sugar in 1/4 cup of warm water (or milk) and let stand for 5-10 minutes until foamy.
  2. In a separate bowl, mix the hot milk with the instant potato flakes until smooth; let cool to lukewarm.
  3. In a large mixing bowl, combine the bread flour and salt.
  4. Add the yeast mixture, the potato-milk mixture, and the softened butter to the flour.
  5. Stir until a shaggy dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  7. Punch down the dough and shape it into a loaf. Place it in a greased 9x5 inch loaf pan.
  8. Cover and let rise again for 30-45 minutes, until the dough crests just above the rim of the pan.
  9. Preheat oven to 375ðF (190ðC).
  10. Bake for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
  11. Remove from pan and cool on a wire rack before slicing.

Note

Store cooled bread in a plastic bag or airtight container at room temperature for up to 3 days. For longer storage, slice and freeze for up to 3 months.

Ensure the milk and potato mixture is cool before adding to the yeast to avoid killing the yeast. The dough should be soft and slightly tacky; add more flour if it sticks excessively to your hands.

Add 1/2 cup of shredded cheddar cheese or 1/4 cup of dried herbs for a savory twist.
