Ingredients

Directions

  1. Melt the unsalted butter in a large, heavy-bottomed pot over medium-high heat.
  2. Add the chopped shallots and sauté, stirring constantly, until soft and translucent, about 3 minutes.
  3. Add the peeled and cubed red skin potatoes and ground cumin to the pot.
  4. Toss the potatoes with the shallots and butter, cooking for 1 minute to toast the spices slightly.
  5. Pour in the chicken stock (or vegetable stock for a vegetarian version).
  6. Bring the mixture to a boil, stirring occasionally to prevent the potatoes from sticking to the bottom.
  7. Reduce the heat to low, cover, and simmer until the potatoes are very tender and easily pierced with a fork, about 25 to 30 minutes.
  8. Remove the pot from the heat and carefully puree the soup using an immersion blender, or transfer in batches to a standard blender or food mill until smooth.
  9. Return the pureed soup to the pot over low heat and stir in the half-and-half or evaporated skim milk.
  10. Season the soup to taste with salt and freshly ground black pepper.
  11. Ladle the hot soup into bowls and garnish each serving with chopped fresh cilantro before serving.
