Description

These homemade potstickers are a comforting twist on the classic Chinese dumpling, featuring a tender ground pork filling seasoned with aromatic garlic, ginger, and soy. The wrapper is folded neatly to seal in the juices, then pan-fried until the bottoms are golden and crispy. A splash of broth steams the tops, resulting in a perfect texture contrast: crunchy on the bottom, soft and savory on top. Ideal for weeknight dinners or as an impressive appetizer for gatherings, these dumplings are served with a simple dipping sauce of soy, vinegar, and chili.

Ingredients

Directions

  1. In a large bowl, combine ground pork, chopped green onions, soy sauce, rice wine (or sherry), sesame oil, crushed garlic, beaten egg, cornstarch, salt, and pepper.
  2. Mix thoroughly by hand until the ingredients are evenly distributed and the mixture becomes slightly sticky.
  3. Place one dumpling wrapper on a clean surface and spoon approximately 1/2 teaspoon of the pork filling into the center.
  4. Moisten the edges of the wrapper with water using your finger or a brush.
  5. Fold the wrapper in half over the filling and press the edges firmly to seal, pinching out any air pockets. Alternatively, use a dumpling press if available.
  6. Repeat the process with the remaining wrappers and filling, placing finished dumplings on a baking sheet lined with parchment paper.
  7. Heat peanut oil in a large non-stick skillet over medium-high heat.
  8. Arrange the potstickers in a single layer in the skillet, ensuring they are not touching.
  9. Cook for 2-3 minutes until the bottoms are golden brown and crispy.
  10. Carefully pour chicken broth into the skillet until it comes about halfway up the sides of the dumplings.
  11. Immediately cover the skillet with a lid and reduce heat to medium-low.
  12. Steam for 5-7 minutes, or until the broth has evaporated and the dumplings are cooked through.
  13. Remove the lid and cook for an additional minute to crisp the bottoms again if necessary.
  14. Serve the potstickers immediately while hot.
