Description

These homemade potstickers offer the perfect balance of textures: a golden, crispy bottom and a tender, juicy interior. The filling combines ground pork with aromatic garlic, ginger, and scallions for a deeply savory flavor profile. They are incredibly versatile, making them an ideal choice for appetizers, light lunches, or party snacks. While making dumplings from scratch might seem daunting, this recipe simplifies the process using wonton wrappers. The result is a restaurant-quality dish that brings the warmth of Chinese home cooking to your table. Serve them hot with a zesty dipping sauce for an unforgettable meal that everyone will love.

Ingredients

Directions

  1. In a large bowl, combine ground pork, crushed garlic, chopped green onions, egg, soy sauce, cornstarch, dry sherry, salt, sesame oil, pepper, and grated ginger.
  2. Mix the filling thoroughly by hand until all ingredients are well incorporated and the mixture is uniform.
  3. Place a wonton wrapper on a clean, dry surface and spoon about 1 to 1 1/2 teaspoons of the filling into the center.
  4. Dip a finger in water and moisten the edges of the wrapper to help it seal.
  5. Fold the wrapper over the filling to form a half-moon shape, pressing firmly along the edges to remove air pockets and seal tightly.
  6. Repeat the filling and folding process with the remaining wrappers and filling, placing finished potstickers on a parchment-lined tray.
  7. Heat vegetable oil in a large non-stick skillet over medium heat.
  8. Arrange the potstickers in the skillet in a single layer, ensuring they are not overcrowded.
  9. Cook for 2-3 minutes until the bottoms are golden brown and crispy.
  10. Carefully pour enough chicken broth into the skillet to barely cover the bottom, reaching about halfway up the dumplings.
  11. Immediately cover the skillet with a lid and let simmer for 8-10 minutes until the filling is cooked through and the broth has mostly evaporated.
  12. Remove the lid and cook for another minute to crisp the bottoms again if needed.
  13. Serve immediately.

Note

For the dipping sauce, mix 2 parts soy sauce, 1 part rice vinegar, grated ginger, and chopped green onion.

A small drop of sesame oil can be added to the skillet oil for extra aroma.

Ensure the wrappers are sealed tightly to prevent them from bursting during steaming.

If the bottoms lose their crispiness after steaming, you can return them to a hot pan for a minute to re-crisp before serving.
