Ingredients

Directions

  1. Preheat the oven to 325&# 194;°F (160°C). Wrap the bottom and sides of a 9-inch springform pan with foil.
  2. In a medium bowl, combine the crushed Nilla Wafers, melted butter, sugar, and brown sugar until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom and up the sides of the prepared springform pan.
  4. Sprinkle the finely chopped pecans evenly over the crust.
  5. In a large mixing bowl, beat the cream cheese until smooth and creamy, scraping down the sides as needed.
  6. Add the sugar and brown sugar to the cream cheese and beat until combined and fluffy.
  7. Mix in the praline liqueur or rum and salt.
  8. Add the eggs one at a time, beating just until incorporated after each addition. Do not overmix.
  9. Stir in the heavy cream and cornstarch until the batter is smooth and homogeneous.
  10. Pour the filling over the pecan crust and smooth the top with a spatula.
  11. Place the pan in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the cheesecake pan.
  12. Bake for 55 to 65 minutes, or until the edges are set but the center still jiggles slightly.
  13. Turn off the oven and crack the door open, letting the cheesecake cool inside for 1 hour.
  14. Remove from the oven and water bath, then chill in the refrigerator for at least 4 hours or overnight before slicing.
