Ingredients

Directions

  1. Cut the broiler-fryer chicken into serving pieces, wash them, and pat dry with paper towels.
  2. Season the chicken pieces generously with salt and pepper.
  3. In a large frying pan, cook diced bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside.
  4. Pour off excess drippings from the pan, leaving about a tablespoon of fat.
  5. Add butter and olive oil to the pan. Sauté grated carrot and chopped shallots until softened and limp.
  6. Push the vegetables to the sides of the pan. Add the chicken pieces to the center and sauté until browned on all sides.
  7. Carefully pour brandy over the chicken. Ignite with a long match or lighter to flambé, allowing the flames to die down naturally.
  8. Transfer the chicken, vegetables, and bacon to a slow cooker.
  9. Add peeled and chopped tomatoes, dry red wine, marjoram, tarragon, and basil to the slow cooker. Season with additional salt and pepper to taste.
  10. Cover the slow cooker and cook on LOW for 8 hours.
  11. Remove the lid. Skim any excess fat from the surface of the sauce.
  12. Switch the slow cooker to HIGH and cook uncovered until the juices reduce by half and thicken slightly.
  13. Serve the chicken hot with the sauce spooned over rice or risotto.
