This Quesada de Espinaca is a comforting, savory pie that layers crisp, buttery filo dough with a rich filling of feta, ricotta, and fresh spinach. The herbs&# 226;€”dill and parsley—add a bright, aromatic note that cuts through the richness of the cheese. It’s perfect for a hearty lunch or a light dinner, offering a delightful contrast between the crunchy crust and the soft, savory interior. While it requires a bit of patience to layer the delicate pastry sheets, the result is a golden, flaky masterpiece that tastes best served warm or at room temperature.

While it requires a bit of patience to layer the delicate pastry sheets, the result is a golden, flaky masterpiece that tastes best served warm or at room temperature.

Ingredients

Directions

  1. Thaw frozen spinach and squeeze out all excess liquid; if using fresh spinach, wash, chop coarsely, and wilt in a pan, then squeeze dry.
  2. Heat olive oil in a skillet over medium heat; sauté chopped onion and scallions until soft and golden, about 5 minutes.
  3. Add the spinach to the skillet and cook for 2-3 minutes until just heated through; remove from heat and let cool slightly.
  4. In a large bowl, combine the spinach mixture with feta cheese, pot cheese (or ricotta), beaten eggs, chopped dill, chopped parsley, and fresh ground pepper; mix well.
  5. Preheat oven to 350°F (175°C).
  6. Brush a 9x13 inch baking dish with melted butter.
  7. Lay a sheet of filo dough in the dish, trimming as needed to fit; brush generously with melted butter.
  8. Repeat with 5 more sheets of filo, brushing each sheet with butter.
  9. Spread the spinach and cheese filling evenly over the buttered filo layers.
  10. Top with the remaining 6 sheets of filo, brushing each layer with melted butter.
  11. Using a sharp knife, cut the pie into 15 pieces before baking, being careful not to cut all the way through the bottom layer.
  12. Bake for 45-50 minutes, or until the top is deep golden brown and puffy.
  13. Let cool for 10 minutes before serving hot or at room temperature.
