  2. Peel and mince 2 large white onions, thinly slicing them for the salsa base.
  3. Wash and stem 9 serrano chiles, leaving them whole or halved depending on desired heat.
  4. Peel 9 cloves of garlic.
  5. Chop 1 bunch of cilantro, separating the leaves from the stems.
  6. Trim 6 whole scallions, reserving them for charring later.
  7. Bring 2 cups of water to a boil in a heavy saucepan.
  8. Add the tomatillos, 3/4 of the sliced onion, 6 serrano chiles, and 6 garlic cloves to the boiling water.
  9. Cover and simmer for about 30 minutes, or until the tomatillos are tender and have collapsed.
  10. Drain the mixture and let it cool slightly to handle safely.
  11. Transfer the cooked tomatillo mixture to a blender or food processor.
  12. Add the remaining sliced onion, 3 serrano chiles, 3 garlic cloves, cilantro leaves, and 3/4 teaspoon salt.
  13. Blend until smooth, adjusting consistency with a little reserved cooking liquid if needed.
  14. Preheat the oven to its lowest setting (around 170ðF/75ðC) to keep the cheese warm later.
  15. Heat a well-seasoned cast-iron skillet or flat griddle over medium heat.
  16. Lightly brush each of the 12 cheese slices (Oaxaca, Manchego, or Asadero) with oil.
  17. Grill the cheese slices in batches for about 20 seconds per side, just until golden and crisp but not melted.
