Description

This Quick Wheat Bread is a comforting, rustic loaf that delivers the wholesome goodness of whole grains with a subtle sweetness from honey and brown sugar. The batter is enriched with buttermilk for tenderness and brightened with fresh orange peel, creating a complex flavor profile that pairs beautifully with butter or jam. It has a dense, satisfying crumb and a golden crust, making it perfect for breakfast, a mid-afternoon snack, or as an accompaniment to soups and salads. Simple to mix up with pantry staples, this no-knead bread is ready in under an hour and offers a nutritious boost of fiber and whole grains without the wait of traditional yeast breads.

Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (175ðC).
  2. In a large bowl, combine the whole wheat flour, white flour, oat meal, brown sugar, orange peel, baking powder, baking soda, salt, and 1 tablespoon of wheat germ until well blended.
  3. In a separate small bowl or measuring cup, whisk together the buttermilk and egg white.
  4. Pour the wet ingredients into the dry ingredients and stir only until the ingredients are just moistened; do not overmix.
  5. Fold in 1/4 cup of sunflower seeds into the batter.
  6. Lightly oil a 1 1/2-quart round casserole dish or loaf pan.
  7. Sprinkle the remaining 1 tablespoon of wheat germ evenly into the bottom of the prepared dish.
  8. Pour the batter into the prepared dish and smooth the top.
  9. Bake for 50-60 minutes, or until a wooden pick inserted into the center of the bread comes out clean.
  10. If the top begins to brown too quickly, loosely cover the loaf with foil during the last 15 minutes of baking.
  11. Remove from oven and let cool in the casserole dish for 10 minutes.
  12. Turn the bread out onto a wire rack to finish cooling.
  13. While still warm, brush the top of the loaf with honey and sprinkle with additional sunflower seeds if desired.
  14. Serve warm or at room temperature.
