Ingredients

Directions

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry thinly and cut into rectangles approximately 9x15 cm.
  3. Place the pastry rectangles on a baking sheet lined with parchment paper.
  4. Brush the pastry lightly with beaten egg and bake for 10 minutes until partially cooked and slightly puffed.
  5. Remove from oven and slice each pastry piece horizontally to create a pocket, then set aside.
  6. Wash the leeks thoroughly and cut the white parts into fine julienne strips.
  7. Melt the butter in a skillet over medium heat.
  8. Add the leeks and one of the chopped shallots to the skillet.
  9. Sweat the vegetables until soft and translucent, about 5-7 minutes.
  10. Season the mixture with salt, pepper, and a pinch of cayenne pepper.
  11. Pour in the cream and simmer for 3 minutes to reduce the liquid slightly.
  12. Deglaze the pan with the cognac and let it bubble for 30 seconds.
  13. Chop the rabbit livers into small pieces.
  14. Add the chopped livers to the skillet and sauté gently for 2-3 minutes until just cooked through but still tender.
  15. Stir in the remaining chopped shallot and the chopped chives.
  16. Spoon the liver mixture into the prepared pastry pockets.
  17. Fold the pastry edges over to seal the filling, brushing with a little more beaten egg to help it stick.
  18. Return to the oven and bake for 10-12 minutes until the pastry is golden brown and crisp.
  19. Serve immediately while hot.
