Description

This elegant Rabbit Terrine combines tender rabbit meat with lean pork, creating a sophisticated yet approachable charcuterie dish. The addition of garlic, thyme, and Dijon mustard infuses the mixture with classic French aromatics, while shelled pistachios add a delightful crunch and earthy note. Wrapped in lean bacon and slow-baked in a water bath, the terrine achieves a smooth, sliceable consistency that holds together beautifully. It is perfect for entertaining, offering a gourmet appetizer or light lunch when served with crusty bread, butter lettuce, and a dollop of mustard. Allow time for chilling to let the flavors meld and the texture firm up for clean slicing.

Ingredients

Directions

  1. Cut all meat off the rabbit bones and discard bones.
  2. Mix the rabbit meat with the diced lean pork.
  3. Place the meat mixture in a food processor fitted with a steel blade.
  4. Process until the meat is roughly ground.
  5. Transfer the ground meat to a large bowl.
  6. Add garlic, onion, thyme, Dijon mustard, pistachios, salt, and pepper to the bowl.
  7. Return the mixture to the food processor.
  8. Process again until the mixture is finely ground and smooth.
  9. Return the mixture to the bowl and mix thoroughly by hand to ensure even distribution.
  10. Drape bacon strips over the sides and bottom of a 9" x 5" loaf pan, leaving overhang on the sides.
  11. Press the meat mixture firmly into the bacon-lined pan, smoothing the top.
  12. Fold the overhanging bacon strips over the top to cover the meat completely.
  13. Place the loaf pan in a larger roasting pan.
  14. Fill the roasting pan with hot water until it reaches halfway up the sides of the loaf pan.
  15. Bake at 350F (180C) for 1 1/4 hours.
  16. Remove from the oven and let cool to room temperature.
  17. Remove from the loaf pan and wrap tightly in plastic wrap.
  18. Refrigerate until firm and ready to serve.

Note

For best texture, allow the terrine to chill for at least 4 hours or overnight before slicing.

Serve with crusty bread, butter lettuce, and extra Dijon mustard on the side.

The bacon wrapping helps keep the terrine moist and adds a smoky flavor; do not skip this step.

Ensure the meat mixture is packed firmly into the pan to prevent air pockets and ensure even cooking.

Leftovers can be stored in the refrigerator for up to 5 days, wrapped tightly.
