Description

This hearty Rabbit With Sweet Sausages is a comforting, one-pan meal that balances the lean flavor of rabbit with the richness of Italian sausage. The dish is braised in a vibrant sauce made from canned plum tomatoes, fresh orange zest and juice, and aromatic herbs like basil and oregano. The result is a deeply flavorful, savory stew with a subtle citrus brightness and a hint of heat from red pepper flakes. It is an excellent choice for weeknight dinners when you want something substantial yet simple to prepare. Serve it over buttered pasta or rice to soak up the delicious sauce.

Ingredients

Directions

  1. Pierce the sausages several times with a fork to help release fat.
  2. Place sausages in a large covered skillet over moderate heat and simmer for 10 minutes.
  3. Remove the lid and sauté the sausages until well browned on all sides.
  4. Remove sausages from the skillet, let cool slightly, then slice into 1-inch pieces.
  5. In the same skillet with the browned bits and fat, sauté the rabbit pieces until golden brown.
  6. Remove the rabbit from the skillet and set aside.
  7. Pour off all but 1 tablespoon of the fat from the skillet.
  8. Add the garlic, chopped onion, and thinly sliced bell peppers to the skillet.
  9. Sauté over moderately low heat until the vegetables are tender.
  10. Return the sliced sausage to the skillet.
  11. Add the plum tomatoes (with juices), red pepper flakes, tomato paste, white wine, basil, oregano, orange juice, orange zest, and salt.
  12. Simmer the mixture for 10 minutes to blend the flavors.
  13. Return the rabbit pieces to the sauce, cover, and simmer for 20-30 minutes.
  14. Check for doneness by piercing the thickest part of the rabbit leg with a fork; the juices should run clear.
  15. Serve hot with buttered pasta or rice.

Note

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.

Substitutions: If fresh basil or oregano is unavailable, you can use dried herbs, but reduce the quantity by half (e.g., 1 tsp dried instead of 1 tbsp fresh). Dry white wine can be substituted with chicken broth if preferred.

Tip: Piercing the sausages before cooking helps render the fat, which adds flavor to the vegetable and rabbit sauté. Be careful not to drain all the fat, as it contributes to the dish's richness.

Variations: For a spicier kick, increase the amount of red pepper flakes. You can also add other vegetables like carrots or zucchini along with the onions and peppers.
