Rainbow Blossom’s Vegetable Soup
Description
This Rainbow Blossom Vegetable Soup is a celebration of garden-fresh produce, blending crunchy broccoli, earthy potatoes, and sweet carrots into a comforting bowl of warmth. The base of sautéed onions and celery provides a rich aromatic foundation, while a blend of herbs like basil, thyme, and cumin adds depth and complexity. Brightened by tomatoes and finished with a touch of tamari for umami, this vegan dish is perfect for chilly evenings or meal prep. It is simple, nutritious, and packed with flavor.Directions

In a large kettle or stockpot, heat the vegetable oil over medium heat.

Pour in the water and stir well to combine all ingredients.
-
Add the Spike seasoning (or blended herb mixture), garlic flakes, basil, thyme, cumin, chili powder, oregano, parsley flakes, sweetener, and tamari sauce.
-
Bring the soup to a boil, then reduce heat to low and cover.
-
Simmer for 1 hour, or until the potatoes and carrots are tender.
-
Taste and adjust seasoning if necessary before serving.
