Raised Doughnuts Abm
Description
These classic raised doughnuts offer a perfect balance of fluffy, airy interior and a lightly crisp exterior. Enriched with eggs and butter, the dough yields a tender crumb that is far superior to cake-style doughnuts. A hint of mace adds a subtle, warm spice note that complements the sweetness of the powdered sugar glaze. Ideal for weekend breakfasts or afternoon treats, these homemade doughnuts bring the comfort of a bakery to your kitchen. They are best enjoyed fresh while still warm, pairing wonderfully with coffee or hot chocolate.Ingredients
Directions
-
Combine warm water, yeast, sugar, dry milk, eggs, softened butter, mace, baking powder, salt, and flour in a bread machine or large mixing bowl.
-
Knead the dough until smooth and elastic, approximately 10-15 minutes by hand or using the dough cycle of a bread machine.
-
Transfer the dough to a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm, draft-free place for 30 minutes or until doubled in size.
-
Turn the dough out onto a lightly floured surface and divide it in half to make it more manageable.
-
Let the dough rest for 10 minutes to relax the gluten.
-
Roll the dough out to a thickness of about 1/3 inch.
-
Lightly flour a doughnut cutter and cut out doughnuts from the rolled dough.
-
Pat each doughnut gently to remove excess flour and place on a lightly oiled or parchment-lined baking sheet.
-
Cover the doughnuts with a clean kitchen towel and let them rise again until doubled in bulk, about 1 hour.
-
While the doughnuts rise, heat 2 inches of oil in a medium saucepan or deep fryer to 375F (190C).
-
Carefully slide 2 or 3 doughnuts at a time into the hot oil.
-
Fry for about 1-2 minutes per side, turning frequently and spooning hot oil over the tops until they are puffed and golden brown.
-
Remove doughnuts with a slotted spoon and drain on paper towels.
-
While still warm, place 2-3 doughnuts into a sturdy paper bag with 1/4 cup of powdered sugar, close the bag, and shake vigorously to coat.
-
Repeat with remaining doughnuts and sugar, serving immediately.
