Raisin Log
Description
This Raisin Log is a comforting, international-style sweet bread that delivers rich, home-style flavor in every bite. Featuring a soft, yeasted dough brushed with sweet milk and generously studded with golden or dark raisins, it is infused with warm spices like cinnamon, allspice, and vanilla. The roll is tightly coiled to create beautiful layers, then topped with a crunchy spice-sugar crust that stays intact when sliced. Perfect for breakfast, brunch, or as an accompaniment to coffee, this recipe brings together simple pantry staples to create a treat that is both elegant and deeply satisfying.Ingredients
Directions
-
Roll the dough into a rectangle with the width equal to the length of the pan (medium size loaf) and about twice as long.
-
Brush the surface of the dough with canned milk.
-
Scatter raisins evenly over the surface.
-
Mix vanilla sugar, cinnamon, and allspice together and sprinkle evenly over the raisins.
-
Roll the dough up tightly but do not seal the ends.
-
Place the roll seam-side down in the prepared pan.
-
Butter the top generously and push a sharp pointed knife down through the dough almost to the bottom at regular intervals to allow air bubbles between layers to escape.
-
Set in a warm place to rise until ready for the oven.
-
Mix the topping ingredients (sugar, cinnamon, allspice, and cornstarch) well and spread over the risen dough.
-
Bake in an oven preheated to 350&# 194;°F (177ðC) for 50 to 60 minutes.
-
Cool completely before slicing.

Note
If vanilla sugar is not available, dribble 1 tsp of vanilla extract over the dough instead.
Use grated raw potato starter for the dough if following traditional methods.
The cornstarch in the topping helps bind the spices to the crust so that it will not crack off badly when sliced.
