Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. In a medium bowl, combine flour, 1/2 cup of the pecans, cinnamon, allspice, and salt. Set aside.
  3. In a large bowl, beat softened butter with an electric mixer at medium speed until smooth.
  4. Gradually add brown sugar and beat until light and fluffy. Increase speed to high if necessary.
  5. Beat in vanilla extract until well blended.
  6. Reduce mixer speed to low and gradually beat in the flour mixture just until combined. Do not overmix.
  7. Roll dough into 1-inch balls and place them on ungreased cookie sheets, spacing them about 2 inches apart.
  8. Press down gently with your thumb in the center of each ball to create an indentation. Pinch together any cracks in the dough.
  9. Fill each indentation with a scant 1/2 teaspoon of raspberry jam.
  10. Sprinkle the tops of the cookies with the remaining 1/2 cup of pecans.
  11. Bake for 14 minutes, or until the edges are just set and lightly golden.
  12. Let cookies cool on the cookie sheets for 5 minutes before transferring to wire racks to cool completely.
