This elegant Raspberry Ribbon Cheesecake features a rich chocolate wafer crust and a surprisingly light, fluffy filling made with whipped cream and egg whites. The star of the show is the homemade raspberry ribbon, a bright, tangy sauce that creates beautiful marbled layers throughout the cake. Unlike dense traditional cheesecakes, this version is airy and refreshing, making it a perfect choice for spring or summer gatherings. The combination of the deep chocolate crust, creamy vanilla filling, and tart berry topping offers a complex flavor profile that is both indulgent and balanced. Directions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, combine chocolate wafer crumbs, 3 tablespoons sugar, and melted butter until moistened.
  3. Press the mixture firmly into the bottom and 1 1/2 inches up the sides of a greased 9-inch springform pan.
  4. Place the crust in the refrigerator to chill for 1 hour while you prepare the filling and sauce.
  5. Puree 2 1/2 cups of raspberries in a blender or food processor until smooth.
  6. Press the puree through a fine-mesh sieve to remove seeds, discarding the solids.
  7. Add water if necessary to measure exactly 1 cup of raspberry juice.
  8. In a small saucepan, whisk together the remaining 2/3 cup sugar and cornstarch.
  9. Stir in the 1 cup raspberry juice and bring to a boil over medium heat, stirring constantly.
  10. Boil for 2 minutes, stirring constantly, until the sauce thickens.
  11. Remove from heat and stir in lemon juice. Set aside to cool slightly.
  12. In a large mixing bowl, beat softened cream cheese, 1/2 cup sugar, flour, and vanilla extract until smooth and fluffy.
  13. Beat in egg whites on low speed just until blended.
  14. Gently fold in the whipping cream until just combined.
  15. Pour half of the cheesecake filling into the prepared crust.
  16. Spoon 3/4 cup of the warm raspberry sauce over the filling.
  17. Carefully spoon the remaining filling over the sauce.
  18. Bake at 375°F (191°C) for 35-40 minutes, or until the center is nearly set but still slightly jiggly.
  19. Remove from oven and immediately run a thin knife around the edge of the pan to loosen the cake.
  20. Cool on a wire rack for 1 hour.
  21. Refrigerate the cheesecake, uncovered, for at least 4 hours or overnight until fully set.
  22. To serve, stir orange juice into the remaining chilled raspberry sauce.
  23. Gently fold the remaining 1 1/2 cups of whole raspberries into the sauce.
  24. Spoon the topping over the chilled cheesecake before slicing.
