Description

These Ratatouille-Stuffed New Potatoes offer a elegant twist on the classic French vegetable stew. The dish features tender new red potatoes baked until crisp, then hollowed out and filled with a rich mixture of diced eggplant, bell peppers, onions, and plum tomatoes. Aromatics like fresh basil, garlic, and balsamic vinegar enhance the natural sweetness of the vegetables, while a sprinkle of Parmesan adds a savory finish. This vegetarian side dish is perfect for summer dinners, potlucks, or as a hearty accompaniment to grilled meats. The combination of crispy potato skins and soft, flavorful ratatouille provides a delightful textural contrast that is both comforting and sophisticated.

Directions

  1. Preheat oven to 475°F (246°C).
  2. Place the scrubbed potatoes on a baking sheet and bake in the middle of the oven for 45 to 50 minutes, until tender and slightly crisp. Test with a knife or skewer.
  3. Remove potatoes from the oven and let them cool until handleable. Leave the oven set at 475°F (246°C).
  4. While potatoes cool, heat 1 tablespoon of olive oil in a large frying pan over medium heat.
  5. Add the finely chopped onion and sauté, stirring frequently, for about 5 minutes until translucent.
  6. Add the diced eggplant and cook, stirring, for 5 to 7 minutes until it begins to soften.
  7. Add the diced bell peppers and cook, stirring, for 5 minutes longer.
  8. Add the chopped tomatoes, minced garlic, fresh basil, and balsamic vinegar. Continue cooking for 5 to 10 minutes until the liquid has evaporated and the eggplant is soft.
  9. Season the vegetable mixture with salt and pepper to taste. Set aside.
  10. Cut each baked potato in half crosswise. If the bottoms are uneven, trim a thin slice off so they stand upright.
  11. Scoop out most of the potato pulp from each half, leaving a thin shell. Reserve the pulp for another use.
  12. Place the hollowed potato shells on the baking sheet, hollow sides down. Brush the skins with 1 tablespoon of olive oil.
  13. Bake the potato shells for 10 to 15 minutes until the skins are crisp.
  14. Remove from oven and reduce the oven temperature to 425°F (218°C).
  15. Flip the potato shells over. Sprinkle the insides with some of the Parmesan cheese.
  16. Spoon the ratatouille filling into the potato shells and place them on an ungreased baking sheet.
  17. Sprinkle the remaining Parmesan cheese over the filling.
  18. Bake for 10 to 15 minutes, or until heated through and cheese is melted.
  19. Serve immediately.
