Ravioli San Guiseppe
Description
These Ravioli San Guiseppe are a sophisticated Italian dessert that transforms simple ingredients into a golden, flaky treat. The shortcrust pastry shell encases a rich, aromatic filling of sweet candied apple slices, plump prunes soaked in tea, and crunchy pine nuts. Baked until light golden, the ravioli offer a delightful contrast between the crisp pastry and the soft, jammy interior. They are best served slightly warm, dusted with icing sugar, and accompanied by a dollop of whipped cream or vanilla ice cream.Directions
-
In a food processor, combine the flour, salt, and 2.5 oz of caster sugar.
-
With the machine running at full speed, add the diced cold butter and process until incorporated.
-
Add the egg and lemon zest, processing for a few seconds until a soft dough forms.
-
Scrape the dough onto a sheet of cling film, form into a cylinder, wrap tightly, and chill for at least 1 hour.
-
While the dough chills, sweeten the hot tea with 2 teaspoons of sugar and soak the prunes in the mixture.
-
Peel, core, and slice the apples.
-
In a large pan, combine the remaining sugar with 2 tablespoons of water.
-
Heat gently, stirring occasionally, until the sugar has dissolved.
-
Add the apple slices to the syrup.
-
Increase heat to medium and cook without stirring until the apples are candied and most liquid has evaporated into a thick syrup, approximately 15-20 minutes.
-
Drain the prunes, chop them roughly, and add them to the pan with the candied apples and pine nut kernels.
-
Remove from heat, mix well, and transfer to a bowl to cool completely.
-
Preheat the oven to 180°C (350°F).
-
On a floured surface, roll out the chilled dough cylinder into thin sheets.
-
Use a 3-inch round cutter to cut out neat circles from the dough.
-
Place a small spoonful of the apple-prune filling onto the center of each circle.
-
Brush the edges of the circles with water, fold over to create a half-moon shape, and crimp the edges firmly to seal.
-
Place the sealed ravioli on a greased baking sheet.
-
Bake for 10-15 minutes, or until the pastry is light golden brown.
-
Remove from oven, cool slightly, dust with icing sugar, and serve immediately with whipped cream or ice cream.
