Rhubarb Sorbet
Description
This classic Rhubarb Sorbet offers a delightful balance of tart fruit and subtle sweetness, enhanced by the bright aroma of orange zest. Unlike traditional sorbets that rely solely on ice cream maker churning, this version uses whipped egg whites to create an exceptionally light, mousse-like texture that melts beautifully on the tongue. The rhubarb is gently cooked to preserve its vibrant color and flavor, then pureed for a silky smooth base. It is an elegant yet simple dessert perfect for spring gatherings or as a palate-cleanser after a rich meal. While it contains egg whites, it remains dairy-free, making it a versatile option for those avoiding dairy products. The result is a refreshing, sophisticated treat that captures the essence of fresh garden rhubarb.Ingredients
Directions
-
Wash and trim the rhubarb stalks, removing any leaves, then slice them thinly.
-
Place the sliced rhubarb in a flameproof casserole dish.
-
Sprinkle the finely grated orange zest over the rhubarb and drizzle with 2 tablespoons of honey.
-
Cover the dish and let it sit in a cool place for at least 2 hours, or until the honey has drawn out significant juices from the rhubarb.
-
Cook the rhubarb in a low oven (approx. 300&# 194;°F/150ðC) or on a very gentle stove flame, covered, until the fruit is perfectly tender.
-
Remove from heat and let the rhubarb cool slightly.
-
Add the remaining 2 tablespoons of honey to the cooked rhubarb.
-
Transfer the mixture to a food processor and blend until you have a very smooth puree.
-
Allow the puree to cool completely, then refrigerate until it is quite cold.
-
Pour the cold puree into a chilled loaf tin or shallow container and freeze until the edges are firm but the center is still slushy.
-
Remove from the freezer and beat the half-frozen mixture vigorously to break up ice crystals until it reaches a slushy consistency.
-
In a clean bowl, whisk the egg whites until they form stiff peaks.
-
Gently fold the whipped egg whites into the rhubarb mixture until it is uniformly pale pink and airy.
-
Cover the container and freeze until solid.
-
Before serving, beat the sorbet once more to break up any large ice crystals and increase volume, then refreeze briefly if needed until ready to serve.

Note
For best results, prepare the cooked rhubarb puree a day ahead to ensure it is thoroughly chilled before freezing.
Shortbread fingers or a crisp biscuit make an excellent crunchy accompaniment to this soft sorbet.
If you prefer a vegan version, omit the egg whites and churn the puree in an ice cream maker, or beat the mixture manually every 30 minutes while freezing to achieve a smoother texture.
Ensure the bowl and whisk for the egg whites are completely clean and grease-free to achieve maximum volume.
