Description

A hearty Cajun-style soup featuring red beans and brown rice simmered in vegetable broth. The dish is seasoned with a robust blend of spices including cayenne, paprika, and Tabasco for a warm, spicy kick. Sautéed onions, bell peppers, celery, and jalapenos provide a savory base for this comforting vegetarian meal.

Directions

  1. Mix together all the spices except the salt.
  2. Sauté the onions, bell pepper, celery, and garlic until translucent.
  3. Over medium high heat add the spice mixture and 1/2 a cube of margarine.
  4. Sauté and stir about 5 to 7 minutes scraping all the good stuff that is sticking to the bottom of the pan.
  5. Add the beans, veggie broth and Tabasco sauce and bring to a boil.
  6. Reduce to a simmer.
  7. After about an hour, add the rice and continue cooking until the beans are done, about an hour longer.
  8. Add water as needed.
  9. Adjust salt and serve.
