Roast Duck With Cranberry Sauce
Description
This elegant yet approachable main course features a whole duckling roasted until the skin is golden and crackling, served alongside a luxurious cranberry sauce. The sauce balances the richness of the duck with bright acidity from orange juice and fresh cranberries, deepened by savory port wine and a hint of cayenne. It is a perfect centerpiece for holiday gatherings or special weekend dinners, offering a sophisticated dining experience that remains comforting and familiar. The combination of tender meat and the popping berries creates a delightful contrast in texture and flavor, making every bite satisfying.Directions
-
Rinse the duck under cold water, pat it completely dry, and remove any large lumps of fat from the skin.
-
Rub the inside cavity and the skin of the duck with the lemon halves, then season both the cavity and skin generously with salt and pepper.
-
Truss the duck to hold its shape, place it on a rack set in a shallow roasting pan, and position it in the oven.
-
Roast at 350°F (175°C) for 30 minutes, then pierce the skin all over with a fork to help release excess fat.
-
Continue roasting for 1 1/2 to 2 hours until the duck is completely cooked through.
-
About once every hour, carefully remove all but 1 cup of fat from the roasting pan to prevent scorching while keeping enough to baste.
-
During the last 15 minutes of roasting, increase the oven temperature to 500°F (260°C) to crisp the skin.
-
Remove the duck from the oven and transfer it to a warm plate to rest.
-
Pour off and discard the excess fat from the roasting pan, leaving the browned bits (fond) behind.
-
Place the roasting pan on the stovetop over low heat and add the port wine, scraping up the browned bits with a wooden spoon.
-
Add the butter to the pan and heat until melted.
-
Stir in the flour until smooth to create a roux.
-
Gradually whisk in the chicken broth, cooking and stirring constantly until the sauce is smooth and thickened, about 2 to 3 minutes.
-
Stir in the orange juice and 2 tablespoons of brown sugar, mixing well to combine.
-
Add the cranberries and cook over high heat until they begin to pop and burst, about 2 to 3 minutes.
-
Season the sauce with cayenne pepper and additional salt and pepper to taste.
-
If the sauce is too tart, stir in the remaining brown sugar to balance the flavor.
-
Using poultry shears, cut the duck in half lengthwise and place each half on a serving dish.
-
Spoon half of the cranberry sauce over each serving of duck.
-
Serve immediately while hot.
