Note

For best flavor, prepare this sauce a day in advance to allow the ingredients to meld together.

Store in an airtight container in the refrigerator for up to two weeks. The sauce may thicken when cold; stir or add a teaspoon of water to restore consistency before serving.

If you do not have grated young ginger, you can substitute with 1/2 teaspoon of ground ginger or omit it entirely, though fresh ginger adds a bright, spicy note.

Rice vinegar can be substituted for the lemon juice if you prefer a more traditional Japanese flavor profile, though lemon adds a nice freshness.

Be careful not to burn the sesame seeds, as burnt seeds will impart a bitter taste to the sauce. Keep them moving in the pan.
