Description

This robust roasted garlic salsa delivers a deep, smoky flavor profile that transforms simple ingredients into a crowd-pleasing condiment. By grilling tomatoes, onions, jalapeos, and garlic cloves over an open flame, you unlock a rich, caramelized sweetness that contrasts beautifully with the sharp heat of fresh chiles and the aromatic punch of Cajun spices. The result is a textured, vibrant salsa that is perfect for serving alongside grilled meats, fish, or with sturdy tortilla chips. After blending and chilling, the flavors meld together, creating a complex dip that is both refreshing and hearty. Its an ideal addition to summer cookouts or as a sophisticated starter for dinner parties.

Ingredients

Directions

  1. Build a charcoal fire and scatter presoaked mesquite chips over the coals to create a smoky heat source.
  2. Place peeled garlic cloves on a mesh grilling rack over the glowing coals.
  3. Grill the garlic cloves, turning them often, until they are golden brown and tender; remove from the grill and set aside.
  4. Grill the whole tomatoes, peeled onions, and whole jalapeo chiles over the coals, turning frequently, until the skins are charred and blistered.
  5. Remove the charred vegetables from the grill and let them cool slightly, leaving the skins on.
  6. Core the tomatoes and remove the stems and veins from the jalapeos, but keep the seeds if desired for extra heat.
  7. Cut the grilled tomatoes, onions, and chiles into large chunks.
  8. Place the vegetable chunks into a food processor or blender.
  9. Pulse the mixture on-off until it is coarsely chopped into small, firm pieces, avoiding a smooth puree.
  10. Transfer the ground vegetable mixture to a large bowl.
  11. Add the grilled garlic cloves, chopped cilantro, chopped green onions, olive oil, hot pepper sauce, and Cajun spice blend to the bowl.
  12. Thoroughly combine all ingredients until evenly distributed.
  13. Cover the bowl tightly and refrigerate for at least 24 hours to allow the flavors to meld before serving.

Note

If you do not have a charcoal grill, you can roast the vegetables in a very hot oven (450F/230C) on a baking sheet until charred, though the smoky flavor will be less pronounced.

For a smoother texture, blend the vegetables longer, but for a rustic salsa, keep the pulses short to maintain texture.

Store the salsa in an airtight container in the refrigerator for up to 5 days. The flavor improves with time.

Adjust the amount of Jalapeos or hot pepper sauce to control the heat level according to your preference.
