Directions
-
Preheat the oven to gas Mark 6, 400F (200C).
-
Use scissors to cut away the thick central stem from the garlic bulbs and slice about 1/4 inch off the top of each bulb to expose the cloves.
-
Pack the garlic bulbs into a small ovenproof dish.
-
Tuck half a bay leaf into the cut top of each garlic bulb.
-
Season the bulbs generously with salt and pepper.
-
Cover the bulbs with the rosemary sprigs.
-
Squeeze the lemon juice over the garlic and drizzle with the olive oil.
-
Cover the dish loosely with baking parchment.
-
Roast for 35 minutes, basting occasionally, until the garlic is soft and squashy to the touch.
-
Meanwhile, mash the goat's cheese in a bowl and stir in the cream to create a smooth, thick paste.
-
Mix the chopped coriander and deseeded chili into the cheese mixture.
-
Allow the garlic to cool slightly in the dish.
-
Serve the roasted garlic in its dish with the cooking juices, alongside the goat cheese dip, lemon wedges, and hot crusty toast.
