Roasted Tarragon Chicken With Spanish Sherry
Description
This elegant yet approachable roast chicken features a delicate tarragon butter hidden beneath the skin, ensuring every bite is moist and fragrant. The addition of Spanish sherry vinegar and white wine creates a bright, savory pan sauce that complements the rich poultry perfectly. Roasted alongside hearty onions, potatoes, and carrots, the vegetables absorb the flavorful juices, making this a complete one-pan meal. It is an ideal dish for family gatherings or a special weekend dinner where you want to impress without spending hours in the kitchen.Ingredients
Directions
-
Preheat oven to 400°F (200°C).
-
Wash the chicken and pat it completely dry with paper towels.
-
Twist the wings back and tuck them underneath the body.
-
In a small bowl, combine the softened butter and finely chopped tarragon leaves; mix until well blended.
-
Gently loosen the skin from the breast meat using your fingers, pulling away the thin membrane without tearing it.
-
Spread the tarragon butter mixture under the skin, covering as much of the breast area as possible.
-
Season the outside and inside cavity of the chicken generously with salt and pepper.
-
Place a sprig of tarragon inside the cavity and tie the legs together with kitchen twine or secure with skewers.
-
Place the chicken, breast up, in a roasting pan large enough to hold the bird and vegetables snugly.
-
Arrange the quartered onions, potatoes, and carrots around the chicken in the pan.
-
Pour the white wine or vermouth into the bottom of the pan around the vegetables.
-
Roast in the preheated oven for 20 minutes.
-
Reduce oven temperature to 350°F (175°C). Baste the chicken and vegetables with the pan juices.
-
Continue roasting for another 20 minutes, then baste again.
-
Pour the sherry vinegar over the chicken and vegetables and baste once more.
-
Roast for 10 to 12 minutes, then baste again and add the 1/4 cup of water to the pan.
-
Roast for an additional 10 minutes, or until the leg joint moves easily and the juices run clear when the thigh is pierced with a fork.
-
Remove from oven and let rest for 10 minutes before carving. Garnish with fresh tarragon leaves.
