This hearty sandwich transforms simple ingredients into a sophisticated vegetarian meal. The star is the smoky, tender eggplant, grilled until charred and soft, then chopped and mixed with sweet roasted red peppers. This vegetable mixture is layered over a rich, tangy feta cheese spread infused with lemon juice, oregano, and a hint of heat from red pepper flakes. All of this is nestled inside a hollowed-out round of crusty country bread, creating a satisfying, handheld experience. The combination of textures&# 226;€”crunchy bread, creamy cheese, and soft vegetables—makes it perfect for lunch, picnics, or a light dinner. It’s flavorful, fresh, and incredibly satisfying without being heavy.

This hearty sandwich transforms simple ingredients into a sophisticated vegetarian meal. Ingredients

Directions

  1. Prepare a grill or preheat the broiler.
  2. Cut the eggplant crosswise into 1/2-inch-thick slices.
  3. Brush 1/2 tablespoon of olive oil over both sides of the eggplant slices.
  4. Grill or broil the eggplant for about 3 to 4 minutes per side, until lightly browned and tender.
  5. Let the eggplant cool slightly, then chop it coarsely.
  6. Mix the chopped eggplant with the drained and chopped roasted red peppers.
  7. Season the vegetable mixture with salt and pepper to taste.
  8. In a small bowl, mash the feta cheese with a fork.
  9. Add the lemon juice, oregano, red pepper flakes, and the remaining 1/2 tablespoon of olive oil to the feta.
  10. Blend the mixture until smooth and spreadable, then season with black pepper.
  11. Slice the loaf of country bread in half horizontally.
  12. Scoop out about 1 inch of the soft interior from each half to create a cavity.
  13. Spread the feta mixture evenly over the bottom half of the bread.
  14. Spoon the eggplant and pepper mixture over the cheese.
  15. Place the top half of the bread firmly onto the bottom half.
  16. Cut the sandwich into wedges.

Note

Storage: Wrap the assembled sandwich tightly and store in a cool place for up to 8 hours. For best texture, serve immediately after assembly.

Substitutions: If you don't have a round country loaf, you can use a large baguette or rustic sourdough loaf, adjusting the scooping step accordingly.

Tip: For extra flavor, toast the bread halves lightly before assembling the sandwich.
