Description

Roti is a staple flatbread in South Asian cuisine, prized for its soft texture and ability to puff up when cooked. Made simply from whole-wheat flour and water, this recipe yields tender, pliable breads that are easy to fold and roll. The key to great roti is kneading the dough until smooth and resting it to relax the gluten. Cooked on a hot griddle and briefly exposed to direct flame, each roti puffs beautifully, creating a steam pocket that keeps the interior moist. Serve warm alongside curries, stews, or as a wrap for grilled vegetables. This vegan-friendly bread is quick to make and brings authentic flavor to any meal.

Ingredients

Directions

  1. Place the flour in a large mixing bowl.
  2. Slowly add water, mixing with your hand or a spatula, until the flour begins to clump together. You should need slightly less than a cup of water.
  3. Knead the dough firmly for 7 to 8 minutes until it becomes smooth, soft, and pliable. If the dough is too sticky, add a little more flour; if too dry, add a teaspoon of water.
  4. Form the dough into a smooth ball and place it in a bowl.
  5. Cover the bowl with a damp dishcloth and let the dough rest for 30 minutes.
  6. After resting, divide the dough into 12 equal-sized balls. Dust each ball lightly with flour and keep them covered with the damp cloth to prevent drying.
  7. Heat a cast-iron griddle or skillet over medium-low heat for at least 5 minutes. Keep a small bowl of extra flour nearby for dusting.
  8. Take one dough ball and flatten it between your palms. Dust both sides with flour.
  9. Roll the dough out on a floured surface into a thin, even round, approximately 5 to 6 inches in diameter.
  10. When the griddle is hot, place the rolled roti onto the surface.
  11. Cook for about 1 minute until soft bubbles begin to form on the surface.
  12. Flip the roti and cook the other side for about 30 seconds until lightly spotted with brown.
  13. For gas stoves: Turn on a second burner to medium flame. Using tongs, hold the roti directly over the open flame, rotating it for 5 seconds until it puffs up. Flip and repeat for 3 seconds on the other side.
  14. For electric stoves: Place the griddle with the roti under a preheated broiler for a few seconds until the roti puffs up. Watch closely to prevent burning.
  15. Transfer the cooked roti to a plate and cover with a clean kitchen towel to keep it soft.
  16. Repeat the process with the remaining dough balls. Serve warm.
