Description

This sophisticated yet approachable dish features tender salmon fillets nestled atop a bed of sweet, slow-cooked caramelized onions and wilted spinach. The star of the show is the luxurious vodka cream sauce, which brings a subtle sharpness and depth that cuts through the richness of the butter and cream. The addition of crushed green peppercorns provides a gentle, aromatic heat that elevates the entire profile without overwhelming the delicate fish. It is the perfect balance of comforting textures and refined flavors, making it an ideal choice for a special weeknight dinner or a romantic meal at home.

Directions

  1. Preheat oven to 350°F (175°C).
  2. Combine 4 tablespoons of butter and the thinly sliced onion in a large Dutch oven or oven-safe pot.
  3. Cover and bake until the onion is golden brown and caramelized, stirring occasionally, about 45 minutes.
  4. Stir the spinach into the caramelized onions and bake until just wilted, about 3 minutes.
  5. Remove the pot from the oven and keep the spinach and onion mixture warm.
  6. Season the salmon fillets generously with salt and freshly ground black pepper.
  7. Heat olive oil in a heavy large skillet over high heat.
  8. Add salmon fillets in batches and cook for about 3 minutes per side, or until cooked to your desired doneness (medium).
  9. Transfer cooked salmon to a platter and tent loosely with foil to keep warm.
  10. Pour off any excess oil from the skillet, leaving the browned bits.
  11. Add the whipping cream and vodka to the skillet and bring to a boil, simmering until slightly thickened, about 4 minutes.
  12. Add the crushed green peppercorns and the remaining 4 tablespoons of butter, stirring until the butter is just melted and incorporated.
  13. Mix in the fresh lime juice and season the sauce with salt and pepper to taste.
  14. Divide the warm spinach and onion mixture among individual plates.
  15. Top each serving with a salmon fillet.
  16. Spoon the vodka cream sauce generously over the salmon.
  17. Sprinkle with snipped fresh chives before serving.
