Chocolate Coffee Bread Dough
Description
This recipe creates a deeply flavorful, enriched dough perfect for sweet breads or buns. Infused with unsweetened cocoa and instant coffee, it offers a robust chocolate aroma that is both comforting and sophisticated. The addition of black walnuts and seedless raisins provides delightful textural contrast and bursts of natural sweetness. Ideal for weekend baking, this dough can be shaped into rolls, loaves, or braids.Directions
-
Combine warm water and 1 tablespoon sugar in a small bowl or measuring cup.
-
Sprinkle yeast over the water-sugar mixture, stir gently, and let stand for 5-10 minutes until foamy.
-
In a saucepan, warm the milk and 2 tablespoons of butter over low heat until the butter is melted and the mixture is about 110°F (43°C).
-
In a large mixing bowl, whisk together 3 3/4 cups of bread flour, salt, cocoa powder, and instant coffee powder.
-
Beat the eggs slightly in a separate bowl, then add the warm milk mixture and vanilla extract, blending well.
-
Pour the liquid mixture into the dry ingredients along with the foamy yeast mixture, remaining 1/2 cup sugar, and honey.
-
Mix until a dough forms, then gradually add the remaining flour as needed to form a soft, slightly sticky dough.
-
Turn the dough onto a lightly floured surface and knead for 5 to 6 minutes until smooth and elastic.
-
Fold in the chopped black walnuts and seedless raisins during the last minute of kneading.
-
Grease a large bowl with some of the remaining butter. Place the dough in the bowl, turning to coat all sides.
-
Cover the bowl with a damp cloth or plastic wrap and let rise in a warm place for about 1 hour, or until doubled in size.
-
Punch down the dough, shape as desired, and allow to rise again before baking according to your specific bread recipe instructions.
