Description

These Saucy Mini-Loaves offer a delightful twist on traditional meatloaf, presenting individual portions that are easy to serve and customize. The beef mixture is bound with cracker crumbs and seasoned with nutmeg and onion, creating a tender, savory interior. The standout feature is the unique topping: a warm, creamy sauce made from condensed mushroom soup, fresh cucumber, tomato, and sour cream. This combination provides a cool, tangy contrast to the rich beef. Perfect for weeknight dinners, potlucks, or meal prep, these mini-loaves are versatile enough to be eaten warm or cold. They bring a nostalgic, home-style comfort to your table while offering a fun, finger-food presentation that appeals to both kids and adults.

Ingredients

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the ground beef, cracker crumbs, 1 1/4 cups of the cream of mushroom soup, 1/4 cup of the milk, egg, chopped onion, salt, nutmeg, and pepper.
  3. Mix the ingredients thoroughly until just combined.
  4. Divide the meat mixture evenly among 12 ungreased muffin cups, pressing firmly into each cup.
  5. Bake for 30 to 35 minutes, or until the beef is cooked through and no longer pink in the center.
  6. While the loaves are baking, prepare the sauce: In a small saucepan, combine the remaining cream of mushroom soup, chopped cucumber, and 3 tablespoons of milk.
  7. Heat the mixture over medium heat, stirring frequently, until it comes to a boil.
  8. Reduce the heat to low and stir in the chopped tomato and sour cream.
  9. Continue to heat, stirring constantly, just until the sauce is hot and bubbly. Do not let it boil vigorously once the sour cream is added.
  10. Remove the sauce from the heat.
  11. Carefully remove the mini-loaves from the muffin tin and place them on a serving platter.
  12. Spoon the warm cucumber-tomato sauce over the mini-loaves and serve immediately.

Note

If using regular hamburger with higher fat content, place the muffin tin on a cookie sheet or jelly-roll pan before baking to catch any dripping juices and prevent oven mess.

The cucumber can be peeled if you prefer a smoother texture or are sensitive to the skin, but leaving it unpared adds nice texture and nutrients.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
