Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Line the bottoms of two 8-inch round cake pans with waxed paper, then grease and flour the pans thoroughly.
  3. In a medium bowl, whisk together flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Set aside.
  4. In a large bowl, mix together white sugar and brown sugar, breaking up any lumps with a fork.
  5. Whisk the eggs into the sugars, then pour in the vegetable oil and mix until fully blended.
  6. Fold in the drained sauerkraut, grated apple, and chopped nuts.
  7. Add the flour mixture to the wet ingredients and stir gently just until moistened. Do not overmix.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake for 35 to 40 minutes, or until a wooden pick inserted into the center comes out clean and the cakes begin to pull away from the sides of the pans.
  10. Let the cakes cool in the pans for 10 minutes, then invert them onto wire racks to cool completely.
  11. Once cool, spread with cream cheese frosting if desired.
