Description

This hearty Italian-inspired dish combines savory Italian sausage, tender beef chuck, and beef short ribs simmered in a rich tomato and red wine sauce. The flavors meld together beautifully as the meats braise until fork-tender, soaking up the aromatic garlic, onions, and herbs. Served over al dente rigatoni, the pasta holds the thick, flavorful sauce perfectly in its ridges. It is a comforting, rustic meal that feels special enough for a weekend dinner but is straightforward enough for a busy weeknight. The combination of different textures from the sausage, beef, and ribs creates a deeply satisfying eating experience. Pair with crusty bread to soak up every last drop of the sauce.

Directions

  1. Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
  2. Add chopped onions and minced garlic, sautéing until soft and translucent, about 5 minutes.
  3. Remove the onion and garlic mixture from the pot and set aside in a bowl.
  4. Pat the beef chuck cubes dry and add them to the hot pot, browning on all sides.
  5. Remove the browned beef chuck and add to the bowl with the onions and garlic.
  6. Add the sliced Italian sausage to the pot and brown until cooked through and slightly crisp.
  7. Return the browned beef chuck, onions, and garlic to the pot with the sausage.
  8. Add the beef short ribs to the pot.
  9. Stir in the marinara sauce, tomato paste, dry red wine (or water), and water.
  10. Bring the mixture to a boil, then reduce heat to low, cover, and simmer until the beef and ribs are tender, about 1.5 to 2 hours.
  11. Meanwhile, cook rigatoni according to package instructions until al dente, then drain.
  12. Stir the cooked rigatoni into the pot with the meat and sauce, allowing it to heat through for 2-3 minutes.
  13. Remove from heat and stir in the chopped fresh basil.
  14. Serve hot in bowls, topped with grated Parmesan cheese.
