Sauteed Fennel With Anchovies, Garlic and Sambucca recipe image

This sophisticated side dish transforms humble fennel bulbs into a gourmet experience. The fennel is first blanched to ensure tenderness, then seared in olive oil until deeply golden and caramelized. A rich paste of anchovies and garlic adds a savory umami depth that complements the vegetable’s natural sweetness. The dish is finished with a splash of Sambucca, an anise-flavored liqueur that enhances the fennel’s aromatic profile and adds a subtle sweetness. The bright fennel fronds tossed at the end provide a fresh, herbaceous contrast. Perfect for special dinners or as an elegant accompaniment to roasted fish or poultry, this dish balances earthy, salty, and sweet notes beautifully.

Description

This sophisticated side dish transforms humble fennel bulbs into a gourmet experience. The fennel is first blanched to ensure tenderness, then seared in olive oil until deeply golden and caramelized. A rich paste of anchovies and garlic adds a savory umami depth that complements the vegetable's natural sweetness. The dish is finished with a splash of Sambucca, an anise-flavored liqueur that enhances the fennel's aromatic profile and adds a subtle sweetness. The bright fennel fronds tossed at the end provide a fresh, herbaceous contrast. Perfect for special dinners or as an elegant accompaniment to roasted fish or poultry, this dish balances earthy, salty, and sweet notes beautifully.

Ingredients

Directions

  1. Blanch whole fennel bulbs in boiling water for 10 to 12 minutes, or until fork tender.
  2. Remove fennel from water and refresh immediately in an ice bath.
  3. Drain fennel well and cut each bulb in half lengthwise.
  4. In a 14-inch to 16-inch nonstick sauté pan, heat olive oil over medium-high heat until smoking.
  5. Add fennel pieces, cut side down, and sauté slowly until golden brown.
  6. Add sliced garlic to the pan and turn the fennel bulbs over.
  7. Mash rinsed and patted dry anchovy fillets into a paste and add to the pan.
  8. Pour in Sambucca and swirl through the pan, cooking until the alcohol evaporates, about 1 minute.
  9. Remove fennel bulbs from the pan.
  10. Toss fennel fronds into the remaining liquid in the pan, then pour over the fennel and serve.

Note

Use high-quality extra virgin olive oil for best flavor when searing.

If anchovies are unavailable, you can substitute with capers or a pinch of sea salt, though the flavor profile will differ.

Sambucca can be substituted with other anise-flavored liqueurs such as Pernod or Ouzo if needed.

Ensure the fennel is thoroughly drained after blanching to achieve a good sear.

This dish is best served immediately while the fennel is still warm and the fronds are fresh.
