Description

These savory Indian pancakes, known as dosas, offer a delightful contrast of crispy edges and soft, fluffy centers. Made from a simple batter of soaked and ground mung beans, fresh ginger, and aromatic spices like asafoetida and black pepper, they bring authentic home-style flavor to your table. The subtle heat from cayenne and the earthy depth of garlic or asafoetida create a complex flavor profile that pairs perfectly with chutneys or yogurt. Ideal for a leisurely weekend breakfast or a quick, satisfying meal, these pancakes are vegan-friendly and incredibly versatile. Whether served plain or stuffed with spiced potatoes, they are a comforting dish that invites you to slow down and savor every bite.

Ingredients

Directions

  1. Rinse the dry mung beans thoroughly and soak them in plenty of water overnight (at least 8 hours) to soften.
  2. Drain the soaked beans well.
  3. In a blender or food processor, pulse the cubed ginger root until finely chopped.
  4. Add the drained mung beans and enough water to cover them. Blend until the beans are finely ground into a smooth, fluffy paste. If using a blender, process in batches of 1 cup of beans to avoid overheating the motor.
  5. Stir in the vegetable-seasoned salt, asafoetida (or minced garlic), baking soda, cayenne pepper, and black pepper. Mix well to combine.
  6. Heat a non-stick skillet or griddle over medium heat.
  7. Stir the batter thoroughly before each pancake, as it may separate. Pour a small amount of oil into the skillet to lightly grease the surface.
  8. Scoop 1/3 to 1/2 cup of batter and pour it into the center of the hot skillet.
  9. Immediately use the back of a spoon to spread the batter outward in a gentle, continuous spiral motion, forming a thin circle about 7 to 8 inches in diameter.
  10. Cover the skillet and cook for about 2 minutes, or until the bottom turns a reddish-brown color and the edges begin to lift.
  11. Remove the cover and drizzle a tiny bit of oil around the edges of the pancake.
  12. Flip the pancake gently and cook uncovered on the second side until reddish spots appear and it is crisp to your liking.
  13. Transfer to a plate and repeat with the remaining batter. Serve warm.

Note

Storage: Store cooled pancakes in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster or skillet to restore crispiness.

Substitutions: If you don't have asafoetida, you can use minced garlic or a pinch of garlic powder. For a traditional fermented dosa, let the ground batter rest at room temperature for 4-8 hours before cooking to develop bubbles and a tangy flavor.

Tips: The key to a good dosa is the consistency of the batterit should be pourable like heavy cream. If it's too thick, add more water. If too thin, add a little more ground beans.

Variations: Serve plain with coconut chutney and sambar, or stuff with a mixture of spiced mashed potatoes, onions, and green chilies for a masala dosa.
