  1. Preheat the oven to 325°F (160°C) or Gas Mark 3.
  2. Grease a 1 lb loaf tin thoroughly with butter or oil.
  3. Sift the wholemeal flour, white flour, salt, bicarbonate of soda, and cream of tartar together into a large mixing bowl.
  4. Add the golden syrup to the dry ingredients.
  5. Gradually add enough milk to the mixture, stirring continuously, until a soft, cohesive dough forms. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and knead it very gently for just a minute until it holds together.
  7. Place the dough into the prepared loaf tin and press it down slightly to level the top.
  8. Cover the tin loosely with aluminum foil to prevent the top from burning too quickly.
  9. Bake for 50 minutes.
  10. Remove the foil and continue baking for a further 10 minutes until the top is nicely browned and the bread sounds hollow when tapped on the bottom.
  11. Turn the bread out onto a wire rack to cool completely before slicing.
