  1. In a small bowl, combine dried yeast, warm water, and 1 teaspoon of honey. Stir gently and set aside until the mixture becomes foamy, about 5-10 minutes.
  2. In a saucepan, combine butter, remaining 3 teaspoons of honey, salt, and 1/2 cup of water. Heat gently over low heat until the butter and honey are completely melted.
  3. Pour the warm liquid mixture into a large warmed mixing bowl.
  4. Stir the beaten egg and the foamy yeast mixture into the liquid.
  5. Beat in the all-purpose flour until a soft dough forms. Do not knead the dough.
  6. Cover the bowl and place it in the refrigerator until the dough is cold and firm, about 1 hour.
  7. Preheat oven to 425F (220C). Line two cookie sheets with parchment paper or grease them lightly.
  8. Turn the cold dough out onto a floured surface. Divide the dough into 12 equal pieces.
  9. Roll each piece into a 12-inch long rope. Cut each rope in half lengthwise to create 24 thinner strips.
  10. Place the strips on the prepared cookie sheets, spacing them about 4 inches apart.
  11. In a small bowl, beat the remaining egg with 1 teaspoon of water to create an egg wash.
  12. Brush the egg wash evenly over the bread sticks.
  13. Sprinkle the tops generously with caraway, sesame, and poppy seeds.
  14. Let the bread sticks rise in a warm place for 30 minutes, or until they are not quite doubled in size.
  15. Bake in the preheated oven for 15 minutes, or until the bread sticks are golden brown.
  16. Remove from the oven and cool on a wire rack before serving.
