Shrimp Fried Rice
Description
This Shrimp Fried Rice is a quick, flavorful weeknight dinner that delivers authentic takeout taste in minutes. The dish features succulent shrimp tossed with day-old rice, crisp red bell peppers, peas, and savory barbecued pork. Aromatics like ginger, garlic, and green onions provide a fragrant base, while beaten eggs add richness and texture. It is a satisfying one-pan meal that comes together with high-heat stir-frying, making it perfect for busy evenings.Directions
-
Heat a wok or large heavy skillet over high heat.
-
Add 2 tablespoons of the peanut oil and swirl to coat the wok.
-
Add the shrimp and stir-fry just until pink, about 2 minutes.
-
Remove shrimp from the wok and set aside.
-
Add the beaten eggs to the wok and scramble until set but still slightly runny.
-
Remove eggs from the pan, breaking them into bite-sized pieces, and set aside. Wipe the wok clean.
-
Return the wok to high heat, add the remaining 2 tablespoons of peanut oil, and swirl to coat.
-
Reduce heat to medium-high. Add the green onions, garlic, and ginger, and stir-fry until the onions are half-cooked, about 1 minute.
-
Add the red bell pepper and stir-fry until just tender but still crisp, about 2 minutes.
-
Add the cold rice, spreading it all over the wok and tossing to heat through. Fry for 5 to 7 minutes, adding a little more oil if the rice sticks.
-
Add the thawed peas and toss to heat through, about 1 minute.
-
Return the reserved shrimp, scrambled eggs, and cubed barbecued pork to the wok. Add salt to taste.
-
Stir-fry everything together to heat thoroughly, about 1 to 2 minutes.
-
Serve immediately on a large platter.
