  8. Coarsely chop stewed tomatoes. Add tomatoes and their juice to the pan.
  9. Stir in sweet red pepper strips and frozen peas.
  10. Cover and simmer for about 5 minutes more, or until rice is tender and liquid is absorbed.
  11. Stir in cooked chicken and heat through for about 1 minute.
