Description

Skirlie is a traditional Scottish dish made from toasted oatmeal, often served as a side or main course. This version incorporates wild mushrooms for an earthy depth of flavor. The oatmeal is browned in meat drippings, creating a nutty, textured base that complements the soft onions and tender mushrooms. It is hearty, satisfying, and perfect for a cozy dinner. The use of good quality drippings is essential for authentic taste. This dish pairs well with roasted meats or can be enjoyed on its own as a vegetarian option if vegetable oil is used instead of drippings.

Ingredients

Directions

  1. Wipe and slice the mushrooms.
  2. Skin and slice the onion thinly.
  3. Fry the mushrooms in 1 oz of dripping in a wide frying pan until browned.

  8. Stir the oatmeal constantly in the drippings until it is lightly browned and toasted.
  9. Return the cooked mushrooms to the pan.
  10. Season with salt and black pepper to taste.
  11. Serve hot immediately.

Note

Skirlie is best made with good quality meat drippings from roasted meat for authentic flavor.

Wild mushrooms, such as chanterelles, add a superior earthy flavor if available.

This mixture makes an excellent stuffing for a boned shoulder of lamb.

For a vegetarian version, substitute the meat dripping with butter or olive oil.
