Description

These Smoked Eggs are a delightful twist on the classic deviled egg, perfect for brunches, potlucks, or game-day gatherings. The hard-boiled eggs are halved and filled with a rich, creamy mixture of spreadable cream cheese, finely chopped green onions, and a hint of smoked paprika for depth. The addition of canned creamed corn adds a subtle sweetness and creamy texture, while the celery provides a fresh, crunchy contrast. This dish is vegetarian-friendly and comes together quickly with simple ingredients you likely already have on hand. The result is a visually appealing and flavorful appetizer that balances creamy, smoky, and fresh notes in every bite.

Ingredients

Directions

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil over high heat, stirring gently to help center the yolks.
  2. Boil eggs for 5 minutes, then drain and immediately transfer to an ice bath or cold water to stop cooking.
  3. Peel the cooled eggs and place them in eggcups or on a serving plate. Cut each egg in half lengthwise.
  4. Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork until smooth.
  5. Add the spreadable cream cheese, finely chopped green onion, 1/4 cup canned creamed corn, and a pinch of smoked paprika to the mashed yolks. Mix until well combined and creamy.
  6. Spoon or pipe the filling back into the egg white halves. Garnish with additional smoked paprika or chopped green onion if desired.

Note

For best results, use room temperature eggs to prevent cracking during boiling.

Store leftover filled eggs in an airtight container in the refrigerator for up to 2 days. Do not freeze filled eggs as the texture will suffer.

Substitute cream cheese with mayonnaise or Greek yogurt for a lighter version.

Add a dash of hot sauce or mustard for extra tang and heat.

Celery stalks can be served on the side as a crunchy dipper or chopped finely and mixed into the filling for added texture.
