Directions
-
Heat olive oil in a heavy Dutch oven or large skillet over medium-high heat.
-
Add garlic, thyme, basil, and red pepper flakes; sauté for 2 minutes until fragrant, being careful not to burn the garlic.
-
Add mushrooms, vinegar, salt, and pepper.
-
Reduce heat to medium, cover, and cook until mushrooms are almost tender and have released their liquid, about 4 minutes.
-
Transfer the mushroom mixture to a medium mixing bowl.
-
Add the drained artichoke hearts and hearts of palm to the bowl; toss gently to combine.
-
Let the mixture stand at room temperature for 1 hour to allow flavors to meld. (Can be prepared up to 2 days ahead; cover and refrigerate. Bring to room temperature before continuing.)
-
Drain the salad mixture thoroughly in a colander or sieve to remove excess liquid.
-
Return the drained mixture to the bowl.
-
Add the thinly sliced smoked turkey and all but 1/4 cup of the chive mayonnaise; toss well to coat.
-
Taste and adjust seasoning with additional salt or pepper if needed.
-
To serve, arrange radicchio leaves around the edge of half of each plate and endive leaves around the edge of the other half.
-
Mound the salad mixture in the center of each plate.
-
Drape remaining turkey slices over the salad mounds.
-
Top each serving with a dollop of the reserved mayonnaise.
-
Garnish with fresh chives and additional endive leaves if desired.
