Description

This Soba with Sesame Peanut Sauce is a vibrant, weeknight-friendly main that balances earthy buckwheat noodles with a luscious, creamy sauce. The rich peanut butter base is brightened by rice vinegar and heat from chili oil, while fresh ginger and garlic add aromatic depth. Toasted sesame seeds provide a delightful crunch and nutty aroma. It is a satisfying vegetarian meal that comes together in under 30 minutes, perfect for busy nights or casual gatherings.

Directions

  1. Bring a large pot of water to a rapid boil. Add the soba noodles and cook for 3 to 4 minutes, or until just tender.
  2. Drain the noodles and rinse thoroughly under cold running water to stop the cooking process and remove excess starch. Drain well.
  3. Toss the rinsed noodles with 1 teaspoon of sesame oil to prevent sticking. Set aside.
  4. In a dry skillet over medium heat, toast the sesame seeds until fragrant and lightly golden, stirring frequently. Watch closely to avoid burning.
  5. Transfer half of the toasted sesame seeds to a small bowl for garnish, leaving the rest in the skillet or a separate bowl for the sauce.
  6. Mince the fresh ginger and garlic. Finely chop the green parts of the green onions for garnish and mince the white parts for the sauce.
  7. In a medium bowl, combine the reserved toasted sesame seeds, minced ginger, garlic, minced white parts of green onions, remaining 2 tablespoons sesame oil, peanut butter, warm water, soy sauce, rice vinegar, hot chili oil, and sugar.
  8. Whisk the sauce vigorously until smooth and creamy. Add a splash more water if the sauce is too thick. Taste and adjust seasoning with additional soy sauce or vinegar if needed.
  9. Just before serving, toss the soba noodles with the peanut sauce until evenly coated.
  10. Transfer to serving bowls and sprinkle with the chopped green onion greens and remaining toasted sesame seeds. Serve immediately.
