Description

This Soft Chocolate Frosting is a versatile, rich glaze that strikes the perfect balance between spreadable frosting and decadent filling. Made with simple pantry staples like sugar, potato starch, and chocolate chips, it creates a smooth, glossy finish that enhances any baked good. The texture is uniquely tender, avoiding the stiffness of buttercream while offering more substance than a thin ganache. It is ideal for spreading over warm cakes, filling layer cakes, or drizzling over cookies. This recipe is naturally vegan-friendly when using margarine and ensures a consistent, professional result every time you make it.

Ingredients

Directions

  1. In a medium saucepan, whisk together the sugar, potato starch (or corn starch), and salt until well combined and free of lumps.
  2. Gradually pour in the boiling water while whisking constantly to prevent clumping.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture comes to a full boil.
  4. Once boiling, continue to cook for exactly one minute, stirring vigorously, then remove the pan from the heat.
  5. Immediately stir in the chocolate chips, continuing to mix until they are completely melted and the mixture is smooth and glossy.
  6. Stir in the margarine and vanilla (or vanilla sugar) until fully incorporated and the frosting is silky.
  7. Spread or pour the frosting while it is still warm for the best consistency.

Note

If using vanilla sugar instead of vanilla extract, add it along with the regular sugar at the beginning of the process.

For best results, use high-quality chocolate chips or chopped chocolate to ensure a rich flavor and smooth texture.

This frosting thickens as it cools. If it becomes too thick before using, you can gently reheat it or add a teaspoon of warm water to loosen it.

Store leftover frosting in an airtight container in the refrigerator for up to 5 days. Reheat gently and stir before reuse.
