Ingredients

Directions

  1. In a small skillet, melt 2 tablespoons of unsalted butter over medium heat.
  2. Add the minced bell pepper and sauté for about 2 minutes until slightly softened.
  3. Add the 12 oz of freshly cooked lobster meat, torn into 1/2-inch chunks, to the skillet.
  4. Cook the lobster for a few minutes just until warmed through.
  5. Stir in the 2 tablespoons of snipped fresh chives, cook for 30 seconds more, then remove from heat and set aside.
  6. In a medium heavy skillet, melt 2 more tablespoons of butter over low heat.
  7. Swirl in the 9 beaten large eggs and half of the heavy cream.
  8. Gently scramble the eggs, stirring constantly with a rubber spatula, until they begin to thicken but remain soft, about 5 minutes.
  9. Add the remaining heavy cream and the last 2 tablespoons of butter to the eggs.
  10. Continue stirring gently until the mixture is very thick and creamy.

Note

Use high-quality, freshly cooked lobster meat for the best flavor and texture. Ensure the lobster is fully cooked before adding it to the skillet to warm through.

Keep the heat low when scrambling the eggs to achieve a soft, custard-like consistency. High heat will result in rubbery eggs.

Serve immediately with toasted bagels, croissants, or sourdough toast to soak up the creamy egg mixture.

If you cannot find fresh lobster meat, you can use frozen lobster meat, but ensure it is thoroughly thawed and drained before cooking.
